Ingredients
- 4 Eggs
- 2 Cups all purpose flour
- 1/2 Cup melted butter
- 1/2 Cup coconut milk
- 1/4 Cup fresh or frozen unsweeted, shredded coconut
- 1 Cup sugar
- 2 Tablespoons pure vanilla extract
- 1/2 Teaspoon baking powder
- 1/4 Teaspoon salt
Preheat oven at 160 degrees Celsius (325 degrees Fahrenheit). In a
bowl, mix melted butter and sugar. Add eggs, one at a time with butter
sugar. Mix well. Add vanilla, baking powder, salt and coconut milk.
Blend all purpose flour and shredded coconut.
Grease
cake pan with butter and sprinkle some flour around the sides of the
pan. Pour the cake batter into the pan and bake for 1 1/2 hour.
Remove from the oven and wait until the cake cools off before taking it out of the pan.
